My sister-in-law is in remission from cancer and my mother had leukaemia. Creating these recipes has been an interesting understanding curve, and I feel it will offer healthier choices for everybody – not just individuals who are unwell
300g sliced almonds
400ml double cream
200ml milk
three leaves gelatin
100g caster sugar
Sorbet:
300ml apricot purée
300ml stock syrup
Apricot:
one pt water
1 tea bag
1 lemon, roughly chopped
200g sugar
one orange, approximately chopped
½kg of dried apricot
Panna cotta:
Toast the almonds until golden and then add to the double cream and milk, bring this to the boil and leave to marinate for thirty minutes.
Melt the gelatin in cold water and then add to the milk mix. Pass this by way of a fine sieve and include the sugar.
Pour the liquid into 4 glass bowls and refrigerate.
Sorbet:
Boil the purée and stock syrup with each other and then area into the fridge to great.
Pour the combine into a sorbet machine and churn in accordance to manufacturer’s directions right up until frozen. Keep in the freezer until necessary.
Apricots:
Place all the elements in a saucepan and slowly bring to a simmer. Eliminate from the heat enable the mix to awesome completely. Take away the teabag, orange and lemon. Drain the apricots.
To serve:
Once the panna cotta has set, arrange some apricots on prime of it and finish with a spoonful of sorbet.
