Climate taxes on meat and milk would lead to huge and vital cuts in carbon emissions as well as saving half a million lives a year via healthier diets, according to the first global analysis of the issue.

“But if you’d have to pay 40% more for your steak, you might choose to have it once a week instead of twice.”
The research, published in the journal Nature Climate Change, evaluated the tax required for each food type to compensate for the climate damage its production causes. Beef has a heavy footprint, due to the deforestation and methane emissions associated with cattle and the grains they are fed, and needed a 40% tax on average across the world.
The scientists then assessed how much less of each food type would be eaten as a result of the taxes. They examined different tax regimes and found the optimum arrangement in terms of both emissions and health was to combine the taxes with subsidies for healthy foods, such as fruit and vegetables, and payments to people to compensate for price increases. This ensured poorer people did not end up with worse diets as the result of taxation.
This optimum tax plan would reduce climate emissions by 1 billion tonnes a year – the same as the entire global aviation industry. This huge potential cut in emissions surprised Springmann, as did the heavy impact of dairy products.
Changes to how food is produced and consumed have largely been ignored in the battle against climate change, due to public sensitivity about their food choices, fears about increasing hunger in poorer parts of the world and the lack of straightforward measures to tackle the problem.
“If people see any food price rise, they get angry, so you have to explain why you are doing it,” said Springmann, adding that a successful food tax policy could spend all the money it raised on ensuring people could afford healthier diets. He said a tax in Denmark on unhealthy saturated fats, where the government simply kept all the revenue, was aborted after a year. But in Mexico, a sugar tax on soft drinks has been successful after the funds were spent on free drinking water in schools.
Most of the foods with big climate impacts also happen to be unhealthy when eaten in large quantities, such as beef and dairy. Therefore, if climate taxes cut consumption, fewer people would die from related diseases such as heart disease, strokes and cancers. In the US, for example, people eat three times the recommended level of meat. The researchers found climate taxes would save more than half a million early deaths every year, largely in Europe, the US, Australia and China.
However, cutting the demand for meat and dairy would not be easy, said Rob Bailey, research director at UK thinktank Chatham House: “The challenge is political. As the new research demonstrates, in many countries there is a very strong public health and climate case for dietary change, but it isn’t happening. Governments are reluctant to ‘interfere’ in people’s lifestyle choices for fear of a public backlash and criticism for ‘nanny statism’, as well as the reaction from powerful interests in the food industry and agricultural lobby.”
Bailey said there was currently little pressure on governments to act, partly because the public understanding of the link between diet and climate change is low. But, when people are informed, they find meat taxes far less unpalatable than is supposed, he said.
Calls to cut meat-eating, by the UN and high-profile figures including climate change experts and the economist Lord Stern, have so far been both rare and controversial.
The new research found the taxes needed to compensate for climate damage were 15% on lamb, 8.5% on chicken, 7% on pork and 5% on eggs. Vegetable oil required a large tax of 25%, but this was due to the low initial price of the product, making a relatively modest surcharge look high.
These tax levels were global averages but there was significant variation with, for example, the beef tax being higher in Latin America, where cattle-raising produces more emissions than in other regions. The optimum tax plan also had regional variations, including limiting climate taxes to beef in the lowest income countries, to ensure people there were still able to afford decent diets.
Springmann said it was critical to find a way to cut the environmental impact of food production: “Either we have climate change and more heart disease, diabetes and obesity, or we do something about the food system.”

I remember when there was E.coli outbreak in beef treated with ammonia (it is treated with ammonia in an attempt to kill bacteria). And yes, it’s the same ammonia commonly found in floor cleaners, which can comprise up to 15% of many fast-food burgers. Years ago, the New York Times published a report on the lack of efficacy of ammonia treatment in killing salmonella and E.coli in beef from South Dakota’s, Beef Products, Inc. (BPI).
According to BPI’s website they are the largest processor (a euphemism for murderer) of beef in the country with their ammoniated product is used in frozen hamburger, taco meats, low-fat hot dogs, beef-stick snacks, and is sold to fast-food chains.
BPI uses low-grade beef trimmings (notoriously high in microbial pathogens like E.coli, Salmonella, Lysteria, and Staph), spins off the fat, then pumps the, if you’ll pardon the expression, beef full of ammonia in an attempt to kill the pathogens that multiplied during the fat removal process.
Unfortunately, not all the pathogens are reduced and some might even be increased. At present, the product ends up in 70% of hamburgers served in the U.S. The projection is 100% in five years.
The ammonia used in BPI’s meat (?) substance does not have to be listed as an ingredient as it is classified as a “processing agent”.

Despite massive recalls, disease outbreaks, and scares over mad cow disease, way back when, the U.S. demand for beef has remained relatively constant. Why? Because there is complete faith in “our government’s food inspections”! Are these people drunk??
Meat that is spoiled is sold as fresh due to chemicals to keep it red. Ground beef is made from the scrapings off the slaughter-house floors with ammonia added to kill the bacteria. The school lunch program continues to buy this garbage because it saves them money.
And, in Hawaii, a bill gets killed that would allow vegetarian and vegan meals to be offered in the public schools. And who was influential in killing the bill? The Hawaii Department of Health and the Department of Education.
All of this coming from a government of the people, by the people, and FOR the people. God help us!

But how can the NHS sensibly ban cigarettes as a known health hazard while simultaneously promoting meat? To endorse one known danger while completely banning a similar one makes no sense. Either it’s OK to allow free choice or it’s OK to prevent “unhealthy behaviours”, but you can’t have it both ways. If you ban smoking you have to ban meat, which causes considerably more damage to animals, the environment and individuals than smoking. If you don’t ban meat, then you can’t ban smoking. Which is it to be? George Orwell coined the idea of doublethink in his dystopian novel Nineteen Eighty-Four to highlight the troubling phenomenon where we simultaneously accept mutually contradictory beliefs as true, blissfully unaware there’s any conflict.
In doublethink we fail to notice even the most stunning inconsistencies. Most people like to think of themselves as animal lovers – in the UK for example about half of all households keep pets – yet it’s estimated that only 2%–10% of the UK population is vegetarian (will eat dairy and eggs) and less than 1% is vegan (will not eat or use any animal matter). So it seems that at least 50 million British animal lovers are happy to eat them, which is surely more than a little weird.
We’ve all seen people putting money in animal charity collection boxes with one hand, while eating a beef burger with the other. But even staring absurdity in the face, most of us don’t notice a problem. We only see it once we’re ready to. Until then we flick it away: “pets are different”, “pigs are meant to be eaten”, “we have to have our iron”, “all farmed animals are treated well”, “you can slaughter animals humanely”, and so on.
We are plagued by doublethink because we habitually separate the world into unrelated packets. Smoking is a health issue. Meat is normal. Alcohol is bad. Not allowing tobacco products to be displayed is health promotion. Allowing body parts of slaughtered animals on public view in supermarkets is wholesome. Illogical beliefs appear compatible if their true connections are disguised. Smoking is tightly wrapped in a packet labelled “Very bad for your health”, whereas eating meat is in a quite different packet called “a balanced diet” or “you need your protein”. So long as we see the world in disconnected chunks, we can avoid serious thought, and preserve the status quo. We need more opportunity to think deeply for ourselves. And where better to begin than in the NHS, which should offer balanced information about many life choices, not just those which it’s fashionable to ban.
